You want a custom engraving on stainless? Most of those are aluminum.
I know, that’s why I’m asking about stainless. Anodized aluminum looks great as well. I saw a stainless Hells Bay engraved which looked sweet so I’m wondering if it’s made just for HB as buyers option or is it common among those that offer it as an option, aluminum or stainless.
I can’t find stainless anywhere as an aftermarket option sorta speak.

Definitely. Aluminum is much easier to machine than stainless.
I recently refinished my caiman and went with Vance Manufacturing black hard anodized, which is suppose to be the most corrosion resistant anodize available. They only do custom engraving for large orders.

Gemlux sells stainless, but not engraved to the general public. You’d have to find an engraver, which might be harder to do on stainless.
The material cost is significantly higher, especially if you maintain the thickness and you use a 303 instead of 304 to make it easier to machine. Anything is doable. Probably running shallow double lines would be cheaper than the deep single outline like bobs. If you can get or create artwork, multiple online machining sites will be glad to machine your parts. From the quotes that I have gotten they are pretty reasonable.

It shouldn’t hurt to move down to 1/4” material from the 3/8” aluminum. That will save you. Stay with the 300 series stainless. 303, 304 or 316. If you go with on line services, you might consider laser cutting the parts. They should be able to engrave the parts or cut the letters out depending on the look you are going for.

Halk marine will plates in solid aluminum in whatever thickness you want and can also engrave them.
I have a set of the thicker ones on my panga.
