I am not a soup guy and generally not a stew guy. In fact, my poor wife occassionally attempts to makes such things and call them “dinner” - only to suffer the immediate harassment from the kids and I that soups are appetizers, not dinners, and stews are for people who dont know how to cook properly.
Having said all of that, there is ONE exception allowed for the “soup is not dinner” rule, and it is this recipe. I came across it on an outdoor show when we first moved to NC and there are several versions. Every tome we make it, I cant believe how flavorful, filling, and delicious it is. If you havent tried this recipe with your catch, it is definitely worth a shot. Especially if you like soups and stews, or even if you dont.
It is called “Rockfish Stew” and usually made with Striper. However, redfish or any non-fragile fish does great. Two pieces of advice: make sure the tomatoes are cut up in relatively small pieces and get high quality applewood bacon! Oh, and the eggs go in last.
